Polenta with mushroom ragout and greens



Made this last night. It was good - and easy. This is here as a reminder to myself.

Saute diced bacon to render the fat. Add rinsed chopped kale, toss and steam in it's own moisture until tender.
Meanwhile, slice prepared polenta into 1/2" slices and bake on a greased pan at 400 degrees for 15 minutes.
Top with mushroom ragout (mushrooms sauteed with chicken broth, onions, tomato paste, etc...leftover spaghetti sauce would work too)

Charlie is still average

Charlie had a weight check today and he is 19 lbs (50th Percentile). We weighed him last week on a friends baby scale and it pegged him at 22.5 lbs (95th Percentile)...Whoa!

Perfection Inpizzate



My greatest effort to date:

1 cup sponge starter (mine is a month old...I call him Herb!)
1.33 cup warm water
1 packet yeast
3.5 cups bread flour
2 T olive oil
2 t salt

Knead in th machine for 15 minutes - let rise for 1 hour, then shape into crusts. Bake on a stone at 500 degrees for about 10 minutes.

Dude.
